I’ll be the first to admit that I love trying new foods. Chia seeds are a trending food that has stuck around as a cupboard staple for me, and for good reason. They are extraordinarily high in fibre and Omega-3s which makes them the perfect nutritious superfood to try. As of late, they have become my favourite way to start the day, so wanted to share my recipe for a protein-packed breakfast.

This recipe is really beneficial post-workout also, as getting that protein kick within 45 minutes of exercise ensures you retain the tone you just worked hard in the gym for!

INGREDIENTS

  • 2 tablespoons of chia seeds
  • 1- 1/2 cups of dairy-free milk or water
  • One scoop of Vanilla protein powder
  • Grapefruit to top (optional)
  • Blueberries (optional)
  • pinch of cinnamon

METHOD

Simply mix everything together in a bowl and leave it to thicken up. If I am in a rush and want it asap I leave it for as little as 30 minutes, but for a more desired texture leave it overnight. Chia seeds expand when they are filled with liquid, gelatinising to form a jelly-like texture.

Toppings are endless, but I went for what I had in my fridge today which was half a grapefruit and some blueberries. One of my favourite tips to take a healthy meal to the next level is to pop a handful of berries in the microwave for 20-30 seconds to create a quick hot berry sauce!
